Be Panoramic : Anjeer Barfi, A Journey To Indian Sweets Part I

 
 
Indian sweets or Mithai, are a wide variety of sweets that consist of 3 main ingredients, sugar, milk and flour, and come in a large variety of shapes, colours and sizes. Common Indian sweets that we probably have heard of are barfi, gulab jamun, milk beda, and jalebi. They are eaten after meal, with tea and also are present at cultural events, like weddings, religional processions and rituals. Mithai are extra rich in fat, extremely sweet and very colourful indeed.

Anjeer Barfi, in the picture, is a kind of Barfi, a member in Mithai family. The extra ingredients added, other than sugar, milk and flour, are the combination of cashew nuts, almonds and pistachios.

Late Night Dish : My Fragrant Tuna - Contemporary Healthy Cuisine Part I


This is a simply delicious dish that I made in a contemporary healthy cuisine class conducted by Philippe Keller who won three "Michelin stars". He's a chef de suisine at D'Sens restaurant, Dusit thani hotel, Bangkok. You can pay him a visit, but make sure you can afford a two-person dinner that costs over 7000 baht. Please note that this price is not including the wine.


Each students was required to cook a set of 3 courses, an appetizer or soup, a main dish and dessert, and present it in their own style. Then my tuna just happened to be a nouveau cuisine dish. ( I was complained a lot by the chef that I emphasized too much on the "look" of the food.) By the way, this dish is, I think, handy and easy .The taste of the frozen tuna you can find in Bangkok is what you wouldn't wanna complain. Don't ever mention the fresh tuna, if you don't work in an up-scale kitchen then you wouldn't have any idea where to get it. (See the story of "The Giant Bluefin Tuna" in Late Night Seek if you want to know where all the delicate blue-tuna flesh goes to) But honestly, this recipe can be savory and laxurious enough to score 10 points from your special person. So, wouldn't you wanna surprise someone on the next special occasion?

Be Panoramic : Sheesha, The Art of Smoking

 


A brief introduction : Shisha, sheesha, hooka, hookha or hookah are considered the same thing "water pipe". The only diffrence is how they name it. They called it sheesha in Egypt, and the other names are called by each particular nations in the middle east. People recogzize it as an arabian-originated equipment, but it was indeed first-invented in India. It had spreaded to the Persian, later that to the Arab and Turks.

Shisha is used as; like its name "a water-pipe". It is used to smoke the "MUASSEL". MUASSEL is supposedly the waterpipe tobacco, so don't bother putting some kind of other tobacco in your smoke. In case that you want to get high, then you might know how to use it for such special pleasure. Go back to our shisha, the tobacco are blended into diffrent flavors. The strongest one is the original flavor. It is blended with sugar cane juice, I guess. Other falvors avalible are cherry, cola, mint and the most popular one; apple.

Late Night Scene : Life In The Cage

I took these photos in 2004 when I studied in the school of architecture and design, KMUTT. The students was told, I was told to create kind of "make some-bloody-thing artwork inspired by birdcages". Therefore I started to create a book and I went out a lot to do field researches. These photos were taken on the day I went to "JJ market" for my research. JJ market is the most crowd weekend market in Thailand. The book goes about the story of the caged life comparing to the happiness that we can't catch. I picked out three most meaningful images to display here. By the way, I don't expect anyone to get the same idea as I do, they are just some "scenes" I wanna share so that you can kill your times.

"Green Grass Of Tunnel" is what you can hear at the first track in 1:26 am Musik Playlist Episode 1. Yes, I know it's a very beautiful song and very emotional when listening at late night. This is why the trax was placed in the playlist as a debute trax. More wonderful tracks and great artists will be coming soon, so keep in touch.

Green grass of tunnel belongs to an Icelandic band "múm". Múm (pronounced "moom") is an ICELANDIC musical group that produce kind of down-tempo, experimental and instrumental music. Their music also have a delicate taste of angelic voice. They formed in 1997 and the original members were Gunnar Örn Tynes, Örvar Þóreyjarson Smárason, and twin sisters Gyða and Kristín Anna Valtýsdóttir. Gyða left the band in 2002, and return to her studies in Reykjavík.
